  • 1 Steggles Family Roast Smoky Charcoal Split Chicken
  • 1 bunch continental parsley, chopped
  • 1 bunch mint, leaves picked and chopped
  • 2 cloves garlic, crushed
  • 1/4 cup bulgur wheat
  • 1 small red onion, diced
  • 1 medium tomato, diced
  • 1/2 cup olive oil
  • 1 lemon, juiced
  • 1teaspoons cumin
  • 1teaspoons sea salt (to taste)
  • 1teaspoons freshly cracked pepper (to taste)

Description

The family roast split chicken with an authentic Lebanese charcoal flavour.

Method

Step 1 of 7

Pre-heat fan forced oven to 180°C.

Step 2 of 7

Remove split chicken from all packaging and place on a lined baking tray.

Step 3 of 7

Cook for 35 minutes covered in foil, then remove foil and cook for an additional 35 minutes.

Step 4 of 7

Remove from oven & rest for 15 mins covered in foil.

Step 5 of 7

Place bulgur wheat in a medium heatproof bowl and cover with boiling water. Soak for 10 minutes and then strain off any liquid. Set aside.

Step 6 of 7

In a large mixing bowl, add the chopped herbs, garlic, bulgur wheat, onion and tomato. Stir to combine. Drizzle with the oil and lemon juice. Sprinkle the cumin, sea salt and pepper, to taste.

Step 7 of 7

Stir again to combine. Adjust seasonings to taste and serve.
