- 500grams chicken breast fillets, cut into 2.5cm pieces
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 2 limes, juiced
- 4 cm piece ginger, peeled, finely grated
- 1/4 cup olive oil
- 1/4 red cabbage, finely shredded
- 2 gem lettuce, coarsely shredded
- 1 carrot, cut into matchsticks
- 1 red capsicum, deseeded, thinly sliced
- 1/2 bunch mint, leaves picked
- 3 spring onions, trimmed, thinly sliced

Description
For a summer BBQ recipe, pair these sticky chicken skewers with a refreshing mint slaw.
Method
Step 1 of 4
Thread chicken onto 8 skewers and place in a 1.45L glass container. Place soy sauce, sugar, lime juice and ginger in a jug, then stir until sugar has dissolved. Reserve 2 tbs soy mixture in a 620ml glass container. Pour remaining soy mixture over skewers, turning to coat. Cover with lid and refrigerate for 15 minutes or up to 12 hours, if time permits.

Gradually add oil to reserved soy mixture, whisking until combined. Cover with lid. Place cabbage, lettuce, carrot, capsicum, mint and onion in a 2.2L glass container. Cover with lid. Refrigerate slaw and dressing until required.
Step 3 of 4
Heat a greased barbecue grill or chargrill pan over medium heat. Cook skewers, turning, for 10 minutes or until cooked through.
Step 4 of 4
Meanwhile, add dressing to slaw and toss to combine. Season. Serve skewers with slaw and topped with extra onion.
