  • 1/2 red cabbage (finely sliced)
  • 1 bunch continental parsley (leaves picked)
  • 1 Royal Gala apple, quartered, cored (thinly sliced)
  • grilled chicken breast (to serve)
  • 2tablespoons extra virgin olive oil
  • 1 lemon (juiced)
  • 1tablespoons grain mustard
  • 1/3 cup apple cider vinegar
  • 2tablespoons chives
  • 2tablespoons brown sugar
  • 100grams walnuts (toasted)
  • 1/2teaspoons salt flakes

Method

Step 1 of 3

Combine apple and cabbage in a large bowl. Set aside.

Step 2 of 3

Place vinegar, sugar, mustard and salt flakes in a small saucepan over high heat, and stir until sugar dissolves. Bring to the boil then pour over apple slaw. Toss to combine, then chill for 15 minutes to soften and lightly pickle.

Step 3 of 3

Add lemon juice, parsley, walnuts, chives and oil to slaw, and toss to combine. Serve with grilled chicken.
