- 6 radishes, thinly sliced
- 4 spring onions, finely sliced

- 100grams kale leaf and spinach

Method
Step 1 of 3
Place spring onions into a bowl of iced water and set aside for 10 minutes. Whisk soy sauce, mirin, lemon juice, ginger and caster sugar together in a small jug.

Combine salad leaves, cucumber, carrot and radish in a bowl. Drain spring onion and add to salad.
Step 3 of 3
Drizzle dressing over salad. Scatter with pork crackling and pomegranate arils. Serve immediately.
