  • 400grams rump steak, chopped into cubes
  • 1tablespoons chipotle paste
  • 1 medium lime, zest and juice
  • 1 large red capsicum, cored and chopped
  • 1 large red onion, peeled and chopped
  • 2tablespoons coriander, fresh, chopped
  • 1 cloves garlic, peeled and minced
  • 100grams Greek yoghurt

Description

This BBQ skewers are the perfect light summer dinner option.

Method

Step 1 of 4

Heat the BBQ to a high heat. In a large bowl, toss the beef cubes and chipotle paste together and add a squeeze of lime juice. Add the chopped red onion and capsicum and mix to coat.

Step 2 of 4

Soak 8 wooden skewers in cold water for 10 minutes to prevent them burning on the BBQ. Thread the beef, red onion and capsicum on to the skewers.

Step 3 of 4

Cook for 8-10 minutes on the BBQ until sticky and browned, turning halfway through.

Step 4 of 4

In a small bowl, mix the remaining lime juice with yoghurt, coriander and garlic and serve as a dip for the skewers.
