  • 800grams red washed potatoes, cut into 1cm-thick fries
  • 2 spring onions, thinly sliced
  • 1 bunch baby cos leaves, to serve (to serve)
  • 1 lime, zested, halved (halved)
  • 2tablespoons sesame seeds
  • 800grams beef rump steak
  • 5tablespoons olive oil
  • 5 garlic cloves, crushed (crushed)
  • 200grams sweet Solanato tomatoes

Method

Step 1 of 5

Preheat oven to 200°C. Line 2 baking trays with baking paper. Place potato on trays. Drizzle over half the oil and add 2 garlic cloves and half the sesame seeds. Season and toss to coat. Bake for 40 minutes or until fries are tender and golden.

Step 2 of 5

Meanwhile, drizzle remaining oil over beef. Scatter three-quarters of onion, remaining garlic and zest over beef. Using the back of a spoon, rub lime and onion into beef to release their flavours.

Step 3 of 5

When fries have 15 minutes of cooking time left, heat a chargrill pan over high heat. Cook beef for 3 minutes on each side for medium-rare or until cooked to your liking. Transfer to a plate to rest.

Step 4 of 5

Cook tomatoes in chargrill pan for 3 minutes or until starting to blister, then set aside. Cook lime, cut-sides down, for 2 minutes or until charred.

Step 5 of 5

Thickly slice beef and transfer to a serving platter. Scatter over remaining onion and sesame seeds, squeeze over lime juice and serve with fries, tomatoes and cos leaves.
