- 1 clove garlic, chopped
- 1/2 bunch fresh mint leaves
- 1/2 bunch fresh flat-leaf parsley leaves
- 500grams orange sweet potato, cut into wedges
- 2 bunch broccolini, thick stems halved diagonally
- 1/2teaspoons dried chilli flakes
- 2tablespoons red wine vinegar
- 5milliliter canola cooking spray
- 1/4 cup olive oil
- 8 lamb midloin chops

Method
Step 1 of 3
Steam or microwave potato until just tender. Drain. Spray potato and broccolini with oil. Drizzle 1 tbs oil over lamb.

Heat a large chargrill over high heat. Cook lamb, potatoes and broccolini, turning, for 5 minutes or until lamb is cooked to your liking and vegetables are charred and tender.
Step 3 of 3
Meanwhile, place mint, parsley, garlic and chilli in a food processor. Process until finely chopped. Add vinegar and remaining oil. Process until combined. Season. Serve lamb with charred vegetables and chimichurri.
