Turkey Kofte With Spring Fattoush

- 1 bunch asparagus, sliced lengthways
- 2 cucumbers, roughly chopped
- 3 radishes, sliced
- 2 spring onions, finely chopped
- 2 wholemeal Lebanese flatbreads
- 200grams sugar snap peas, split lengthways
- 1 1/2tablespoons extra virgin olive oil
- 2teaspoons honey
- 1 lemon, 0.5 juiced, 0.5 cut into wedges
- 500grams turkey mince
- 2tablespoons pistachio dukkah
Method
Step 1 of 4
Combine mince in a large bowl with onion, honey and dukkah. Season. Shape heaped tablespoons into oval-shaped patties. Set aside.

To make fattoush, combine peas, asparagus, cucumber and radish in a bowl. Heat a large frying pan over high heat. Brush flatbread with 2 tsp oil. Toast in pan for 2 minutes on each side or until golden and crisp. Cool, then break into pieces.

Reduce heat to medium. Cook kofte for 8-10 minutes, turning, or until golden brown and cooked through. Transfer to a plate.
Step 4 of 4
Drizzle fattoush with lemon juice and remaining oil. Add bread.
