  • 1 cloves garlic, peeled and minced
  • 2tablespoons mint, fresh, chopped
  • 1 medium lemon, juice and zest
  • 1tablespoons honey
  • 2tablespoons olive oil
  • 1 large zucchini, chopped
  • 1 medium red onion, peeled and chopped
  • 250grams halloumi cheese, cut into cubes

Description

Salty halloumi pairs perfectly with lamb and charred zucchinis for a kebab with a difference.
Instruction tip
Serve with a fresh green salad and jacket potatoes for an easy summer dinner.

Method

Step 1 of 4

Place the lamb mince in a large bowl and add the garlic, mint and lemon zest. Mix well to combine and roll into 16 small meatballs. Place on a plate and into the fridge to firm up.

Step 2 of 4

Soak 8 wooden skewers in cold water for 30 minutes, then thread with chopped zucchini, red onion, meatballs and halloumi.

Step 3 of 4

In a small bowl, mix the olive oil, lemon juice and honey and brush on to the skewers.

Step 4 of 4

Heat the barbecue and place the skewers on the grill for 4-5 minutes on each side until caramelised and cooked through.
