Description

These herb crusted cutlets with a refreshing side salad evoke the flavours of the Mediterranean.

Method

Step 1 of 2

Slice the rack of lamb into cutlets. Season with oregano, salt, pepper and sliced onions. allow to infuse for 20 minutes.

Step 2 of 2

Pan fry the cutlets on a hot, non-stick pan for 3 minutes on each side. Allow to rest for 3 minutes. Mix the rocket, oil, tomato and feta together and serve on the side.
