- 1tablespoons olive oil
- 500grams lamb mince
- 1 large onion, peeled and sliced
- 1teaspoons cinnamon
- 1teaspoons garam masala
- 1/3 cup chicken stock, made with 1 stock cube
- 60grams dried apricots
- 1/2 bunch coriander, stalks included, chopped
- 6 filo pastry sheets
- 3tablespoons butter, melted, for brushing
Description
This middle eastern inspired lamb pie is slightly sweet with fragrant cinnamon and apricots.
Method
Step 1 of 4
Pre-heat the oven to 180°C. Heat the oil in a large pan on medium high heat and cook the onions for 3-4 minutes. Add the lamb and cook for 5 minutes. Stir in the spices and cook for 2 minutes.

Tip in the apricots and coriander, pour over the chicken stock and cook for 8-10 minutes, stirring.
Step 3 of 4
To assemble, line a round baking dish with a sheet of filo pastry, brush with butter, add another sheet and repeat until you have a 3 layer base with the excess pastry hanging over the side.
Step 4 of 4
Pour the lamb mix on top of the pastry base and fold over the excess to cover it. Brush the remaining pastry sheets with butter, tear into strips and arrange on top of the pie to make a lid. Bake for 15-20 minutes until golden.
