  • 400grams bulgur wheat
  • 8tablespoons olive oil
  • 2 large onions (finely diced)
  • 400grams okra (trimmed)
  • 6 cloves garlic (grated or finely chopped)
  • 675grams prawns (shelled weight)
  • 1 glass dry white wine
  • 1 large handful fresh dill (chopped)
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Method

Step 1 of 3

Preheat the oven to 150°C. Put the bulgur wheat in a bowl, and pour in enough boiling water to cover. Cover with a tea towel, leave for 5 minutes, then stir.

Meanwhile, heat the oil in a large heavy-based pan, add the onions, and cook over a medium heat for 5 minutes, or until starting to soften. Add the okra and cook for 2 minutes, then add the garlic and prawns and cook, stirring frequently, for 5 minutes, or until the prawns have turned pink.

Stir in the wine and dill and cook for 5 minutes, then stir in the bulgur. Transfer to an ovenproof dish, cover with foil, and season with salt and black pepper. Cook in the oven for 20 minutes, stirring occasionally. Serve with a mixed salad.
