  • 600grams lamb leg, trimmed, diced
  • 200grams dried figs, chopped
  • 400grams chopped tomatoes, canned
  • 2 cup beef stock, made with 1 stock cube
  • 4tablespoons flaked almonds, toasted (to serve)

Description

This easy and warming lamb tajine looks after itself in the oven.

Method

Step 1 of 4

Pre-heat the oven to 180°C. Heat the oil in a large, ovenproof casserole dish and cook the onion for 5 minutes to soften. Add the garlic and ras el hanout and cook for 2 minutes, stirring.

Step 2 of 4

Tip the lamb into the casserole dish and cook for 2-3 minutes to seal. Stir in the figs, chopped tomatoes and stock and bring to the boil.

Step 3 of 4

Cover with the lid and place in the oven for 1 hour. Remove the lid, stir well and place back in the oven uncovered for 30 minutes.

Step 4 of 4

Serve with toasted flaked almonds scattered on top and couscous, if desired.
