  • 2 cloves garlic, peeled
  • 800grams pumpkin, peeled, deseeded and chopped
  • 30grams creme fraiche, reduced fat
  • 40grams parmesan, grated

Description

Sweet pumpkin mash is the perfect match for veal chops and sage, but you can also use butternut squash.

Method

Step 1 of 3

Pre-heat the oven to 160°C. Place the pumpkin and garlic in a large pan of boiling water and cook for 10 minutes, until tender. Drain well and leave in the pan, covered.

Step 2 of 3

Heat the butter and oil in a large, ovenproof pan on medium high heat, top each chop with sage leaves and cook for 2 minutes on each side. Place the pan into the oven and cook for 5 minutes. Leave to rest for 5 minutes covered in foil.

Step 3 of 3

Mash the pumpkin with a handheld blender, stir in the creme fraiche and parmesan and serve with the veal chops.
