- 250grams potatoes, peeled and diced

- 2tablespoons dill, fresh, chopped
- 1 egg
- 3tablespoons plain flour

Description
This tasty smoked cod fritters come together in minutes and make a delicious, easy entree.
Method
Step 1 of 3
Place the smoked cod in a pan with the milk and poach for 5 minutes. Strain the milk, pour into another saucepan and add the potato. Cook for 8-10 minutes, until tender, and drain.
Step 2 of 3
Place the cod and potatoes in a large bowl and add the lemon zest, fresh herbs, egg and flour. Mash well and stir in the finely sliced spring onions. Roll into small patties with your hands and place on a plate until ready to cook.
Step 3 of 3
Heat a layer of oil in a pan and cook the fritters until golden, working in batches. Serve with lemon wedges and extra fresh herbs on top, if desired.
