  • 4 large potato, peeled and grated
  • 1 medium white onion, peeled and sliced thinly
  • 3 cloves garlic, peeled and finely diced
  • 1 medium egg
  • 1tablespoons cracked black pepper
  • 50grams flour
  • 8tablespoons creme fraiche
  • 100grams smoked salmon, cooked and flaked

Description

The textures and combinations in this traditional dish are fresh and delicious.

Method

Step 1 of 4

Prepare your potatoes by peeling and grating. Then wash and drain fully. Use a muslin cloth or similar to ensure as much moisture is drained as possible.

Step 2 of 4

Now in a mixing bowl, combine the rest of the ingredients with the grated potatoes except the flour. Ensure the egg is cracked and combined also.

Step 3 of 4

Once the mixture is combined, incrementally sift the flour into the mixture while stirring constantly. Now separate the mixture into small patties and set to one side.

Step 4 of 4

Shallow fry the patties for 8 minutes but carefully turn over half way through. Remove from the oil carefully and allow to drain on a plate with some kitchen roll. Serve the latkes with a drizzle of creme fraiche and some flaked salmon.
