  • 1 avocado
  • 1 red capsicum, deseeded , cut into large squares
  • 3 red chillis (to serve)
  • 1 red onion, peeled and quartered
  • 1 punnet button mushrooms
  • 2 medium zucchini, peeled lengthwise
  • 90milliliter extra virgin olive oil
  • 1 lemon, juiced
  • 1 pinch cracked black pepper
  • 60grams rocket leaves
  • 500grams pork sausages
  • 10grams thyme lemon fresh herb
  • 2 sprig thyme
  • 1tablespoons mustard
  • 2tablespoons BBQ onion relish
  • 4 hot dog rolls
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 5

Soak the skewers in water for a few minutes to prevent them from burning on the grill.

Step 2 of 5

Preheat a grill pan/bbq to a medium heat.

Skewer the sausages evenly with the red onion, zucchini , mushrooms and red capsicum. To make the glaze. 1. Add 2 tablespoons BBQ onion relish, 90 ml extra virgin olive oil , juice of 1 lemon, chopped thyme, salt and pepper to a medium sized bowl. Mix together.

Brush the skewers with the glaze and add to the grill/BBQ.

Step 5 of 5

Cook turning occasionally for about 15 minutes. Serve in a hot dog bun with smashed avocado, BBQ glaze, rocket leaves and chopped chilli.
