  • 1 red capsicum, thinly sliced
  • 1 carrot, cut into batons
  • 3 spring onions, sliced
  • 150grams snow peas, halved diagonally
  • 2tablespoons rice wine vinegar
  • 1tablespoons oyster sauce
  • 1/4 cup soy sauce
  • 2 flatiron steaks
  • 1tablespoons olive oil
  • 1 clove garlic, crushed
  • 2 cup brown rice
  • 1 long red chilli, sliced

Method

Step 1 of 4

To make dressing, whisk together vinegar and olive oil, season with salt and pepper and set aside. Cook rice according to packet instructions and toss through one third of the dressing.

Preheat an oiled BBQ hot plate or heavy based fry-pan to high heat and cook steaks for 5 minutes per side remove from heat and allow steaks to rest for 5 minutes before slicing thinly against the grain.

Step 3 of 4

Whilst steak is resting combine the ingredients for the Asian reduction in a small saucepan and simmer until thickened slightly.

Step 4 of 4

To serve divide rice into 4 bowls, toss the remaining vinaigrette through the carrots and snow peas and arrange over one half of the rice. Add the beef and capsicum to the other half. Finish with a drizzle of the Asian reduction, and top with chilli and green onions. Tip 1: Experiment with your favourite dressing and condiments your make you own vitality bowl.
