  • 400grams tortillas
  • 1 capsicum, thinly slices
  • 1 handful Fresh coriander leaves
  • 1 large onion, finely sliced
  • 1 lime
  • 40grams Old El Paso FajitaTM Spice Mix
  • 2 corn cobs, husks removed and blanched
  • 700grams rump steak or chicken thigh fillet
  • 2tablespoons olive oil

Method

Step 1 of 4

Heat BBQ or large frying pan until very hot. Combine Fajita Spice Mix and oil, add beef and toss well. Cook half the beef for 4 minutes until browned. Repeat with remaining beef.

Step 2 of 4

Add onion and capsicum, cook a further minute and then squeeze over lime juice. Brown corn and BBQ or chargrill pan for 2 minutes.

Step 3 of 4

For warm and soft Totillas heat according to pack instructions or chargrill on BBQ for 10 seconds.

Step 4 of 4

Serve warmed Tortillas, beef, onion, capsicum and chargrilled corn on a large platter or board and let everyone fill their Fajitas just the way they like
