- 80grams butter
- 1/4 cup milk
- 1 brown onion, freshly chopped
- 1.80kilograms whole chicken
- roast vegetables (and gravy to serve)
- 1/2 cup herbs, chopped (or 2 tsp dried mixed herbs)
- 1teaspoons lemon, grated zest
- 1 clove garlic, crushed
- 125grams hot cross bun
Method
Step 1 of 3
Preheat oven to 200°C. Tear buns into chunks. Place in a bowl with milk and set aside for 5 minutes to soften.
Step 2 of 3
Meanwhile, heat 20g of the butter in a small frying pan. Add onion and garlic and cook for 5-6 minutes or until softened. Add to the soft bread with the herbs, lemon zest and remaining 60g of butter. Season with salt and pepper. Stir well to combine.
Step 3 of 3
Fill chicken cavity with stuffing mixture. Tie legs together with kitchen string. Place chicken, breast-side up, in a roasting pan. Season with salt and pepper. Cook for 1 hour 15 minutes or until golden and cooked when tested with a skewer. Carve chicken and serve.
