  • 1 brown onion, halved
  • 1.70kilograms Woolworths chicken whole marinated & seasoned
  • 800grams potatoes, scrubbed, cut into wedges
  • 1tablespoons honey
  • 1 lemon, halved
  • 1/2 cup parmesan, finely grated
  • 2teaspoons dijon mustard
  • 2tablespoons olive oil
  • 1 bunch thyme
  • 1/2 cup apple juice
  • 2 cloves garlic, crushed

Method

Step 1 of 4

Preheat oven to 200°C. Line 2 baking trays with baking paper. Place lemon, onion and half the thyme inside the chicken. Rub 2 tsp oil over chicken and season to taste. Place into a roasting pan. Roast for 1 hour 15 minutes or until golden and cooked through.

Step 2 of 4

Place potato wedges onto a lined tray. Drizzle with 1 tbs oil. Roast potatoes for 30 minutes. Combine parmesan, garlic and celery salt in a bowl. Sprinkle over potatoes and roast for 15 minutes further or until golden and crisp.

Step 3 of 4

Place carrots onto remaining tray. Drizzle with remaining oil. Season to taste. Roast for 20 minutes or until tender. Drizzle with honey and roast for 10 minutes.

Step 4 of 4

Transfer chicken to a serving plate and cover loosely with foil to keep warm. Drain cooking juices from roasting pan, leaving 2 tbs in pan. Place pan over medium heat and bring to the boil. Sprinkle with flour and whisk to combine. Gradually add apple juice and 1 cup of water, whisking until mixture comes to the boil and thickens. Add mustard, salt and pepper. Serve chicken with potatoes, carrots and gravy.
