- 350grams cherries, pitted, halved
- 1 red onion, finely chopped
- 1 large lime, juiced
- 1tablespoons honey
- 2tablespoons balsamic vinegar
- 1 cup chicken stock
- 1tablespoons chipotle in adobo sauce
- 1tablespoons olive oil
- 1/4 cup brown sugar
- 4 chicken drumsticks
- 4 chicken thigh fillets
- 2 cloves garlic, crushed

Method
Step 1 of 3
Heat olive oil in a saucepan over medium heat. Cook onion and garlic for 4 minutes or until softened. Add three-quarters of the cherries, sauce, stock, juice, sugar, vinegar and honey. Stir until combined and mixture comes to the boil. Simmer for 15 minutes or until cherries are very soft and mixture has thickened slightly. Set aside to cool.
Step 2 of 3
Transfer to a food processor and process until a thick, smooth sauce forms. Season with salt and pepper. Transfer half of the sauce to a serving bowl and stir in remaining cherries. Reserve until ready to serve.
Step 3 of 3
Preheat a barbecue on medium heat. Lay chicken on a baking paper-lined tray. Brush with sauce. Place tray in barbecue and close hood. Cook for 40 minutes, brushing occasionally with sauce, until chicken is golden and cooked through. Serve chicken with reserved extra sauce.
