  • 1 cucumber, sliced
  • 1 small cos lettuce, leaves separated
  • 1/4 cup rice wine vinegar
  • 1tablespoons chilli sauce
  • 2 1/2tablespoons maple syrup
  • 2tablespoons reduced-salt soy sauce
  • 2tablespoons sesame seeds
  • 1/4 cup quinoa flakes
  • 8 chicken drumsticks
  • 4 cloves garlic, crushed

Method

Step 1 of 5

Remove skin from drumsticks and discard. Mix vinegar, maple syrup, sauces, oil and garlic in a large non-reactive bowl. Add drumsticks and toss to coat. Marinate for 4-6 hours or overnight.

Step 2 of 5

Preheat oven to 200°C. Line a roasting pan with baking paper. Place drumsticks and marinade in pan and bake for 40 minutes, turning halfway, or until cooked through.

Step 3 of 5

Meanwhile, heat frying pan over medium heat. Add quinoa and sesame seeds and toast, stirring, for 3-4 minutes or until toasted and golden.

Step 4 of 5

Scatter quinoa mix over drumsticks and serve with lettuce, cucumber and relish.

Step 5 of 5

Serve with tomato, date & apple relish.
