- 1/2 cup small basil leaves
- 1 large red capsicum, deseeded
- 320grams country white baguette
- 1/3 cup extra virgin olive oil
- 1teaspoons dried mixed herbs
- 2 lemons
- 1 cup pitted Kalamata olives
- 1 garlic bulb
- 2kilograms chicken drumsticks
- 390grams sweet berry truss tomatoes

Method
Step 1 of 3
Preheat oven to 200°C. Cut through meat, 2cm from end, around drumsticks and use kitchen scissors to cut and remove tendons. Push the meat away from end to form a ball.
Step 2 of 3
Place baguette slices in a single layer in a roasting pan. Lay drumsticks over bread. Add garlic bulb. Squeeze lemons over, discarding pips, and add skins to pan. Whisk oil and mixed herbs in a jug. Drizzle over chicken. Season with salt and pepper. Bake for 40 minutes.
Step 3 of 3
Add capsicum, tomato and olives to pan. Return to oven and bake for a further 15 minutes or until chicken is golden and cooked through. Squeeze garlic over chicken, garnish with basil leaves and serve.
