- 2tablespoons apple cider vinegar
- 1/3 cup mint leaves, roughly chopped
- 1 small red onion, finely chopped
- 8 large chicken drumsticks
- 1/2 cup apple sauce
- 1/4 cup honey
- 2 granny smith apples
- 1/3 cup whole egg mayonnaise
- 1tablespoons dijon mustard
- 2tablespoons brown sugar

Method
Step 1 of 3
Combine apple sauce, honey, sugar, vinegar and mustard in a large bowl. Add drumsticks and stir to coat well with marinade. Cover and marinate in the fridge for 1 hour if time permits.
Step 2 of 3
Preheat oven to 200°C. Line a large tray with baking paper. Place drumsticks on tray and bake, basting with marinade every 10 minutes, for 40 minutes or until golden and cooked through, turning over half way through cooking time.
Step 3 of 3
Meanwhile, quarter apples and core. Thinly slice and place in a large bowl with onion, mint, mayonnaise, salt and pepper. Toss until combined. Serve drumsticks with apple salad.
