- 150grams unsalted butter, melted
- 200grams Woolworths Greek-style feta, crumbled
- 1 cup shredded tasty cheese
- 2 cloves garlic, crushed
- 1/2 bunch dill, leaves picked, chopped
- 1/2 bunch mint, leaves picked, chopped
- 1 lemon, zested
- 18 sheets filo pastry
Description
Embrace (literal!) layers of flavour with these herby, cheese filo snail-shaped scrolls. They're perfect to make in advance of your next picnic.
Method
Step 1 of 4
Preheat oven to 220°C/200°C fan-forced. Grease a 12-hole cup/capacity muffin pan with a little butter.
Step 2 of 4
Combine feta, cheese, garlic, dill, mint and zest in a bowl. Season well with pepper.
Step 3 of 4
Stack 6 pastry sheets, brushing with butter in between each sheet. Cut pastry stack into 4 strips lengthways.
Step 4 of 4
Spoon 2 tbs feta mixture along the top half of each pastry strip. Fold pastry in half lengthways to cover filling. Roll pastry to form a scroll. Place each scroll in a prepared pan hole. Repeat with remaining filo, butter and feta mixture to make 12 scrolls in total. Brush tops and sides with any remaining butter. Bake for 25 minutes or until pastry is golden. Stand in pan for 5 minutes to cool. Serve.
