  • 500grams Woolworths RSPCA Approved chicken thigh fillets
  • 150grams Woolworths coconut and lime red curry sauce
  • 250grams green beans, trimmed, halved lengthways
  • 450grams Woolworths microwave long-grain white rice
  • 1/4 bunch Woolworths coriander, leaves picked
  • 1 long red chilli, sliced

Description

Dinnertime doesn't get better than an easy, flavour-packed, budget-friendly traybake – and this red chicken curry recipe won't disappoint!

Method

Step 1 of 4

Preheat oven to 210°C/190°C fan-forced. Line a baking tray with baking paper. Add chicken to a medium bowl. Pour over curry sauce. Toss to coat. Set aside for 5 minutes to marinate.

Step 2 of 4

Transfer marinated chicken to prepared baking tray. Bake for 22 minutes or until almost cooked through.

Step 3 of 4

Add beans to tray and bake for a further 3 minutes or until chicken is cooked through and beans are bright green and tender.

Step 4 of 4

Heat rice according to packet instructions. Divide rice among bowls. Top with chicken. Sprinkle with coriander and chilli. Serve.
