  • 350grams Macro chicken schnitzel
  • 1/2 cup Macro Organic tri colour quinoa
  • 2tablespoons extra virgin olive oil
  • 1 lemon, cut into wedges
  • 1 punnet Woolworths Qukes baby cucumbers, cut into long slices
  • 250grams Macro Organic coleslaw & kale slaw kit

Description

Perfect for a midweek dinner, this simple chicken schnitzel recipe delivers satisfying crunch and flavour in every bite. It's great value too!

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Place schnitzels on a baking tray lined with baking paper. Bake for 10 minutes. Flip, then continue baking for a further 10 minutes, or until cooked through. Thinly slice.

Step 2 of 4

Meanwhile, in a small saucepan over low heat, mix 1/2 cup quinoa with 1 cup water. Bring to a simmer. Cook for 10 minutes or until water has absorbed. Remove from heat to stand covered for 5 minutes. Fluff with a fork.

Step 3 of 4

In a medium bowl, combine oil, pepper and the juice of ¼ lemon. Add quinoa, cucumber and slaw, reserving dressing. Gently toss everything together.

Step 4 of 4

Spoon quinoa slaw among serving plates and top with schnitzel slices. Drizzle with reserved dressing. Serve with lemon wedges.
