- 1 spring onions, cleaned, trimmed, sliced
- 1 capsicum, seeds and veins removed, sliced
- 1/2 bunch asparagus, trimmed, cut in half
- 800grams salmon filets, scaled and deboned
- 4tablespoons dry barbecue seasoning
- 4tablespoons butter, diced
- 1 lemon, sliced
- 2tablespoons chives, thinly sliced
Description
The easiest grilled salmon entree all wrapped up into one delicious package, allowing you skip doing the dishes.
Method
Step 1 of 4
Set the barbecue to medium-heat allowing the grill to warm up for 10 minutes. Tear 8 squares of foil creating 4 sheets doubled up, dividing the spring onion, capsicum and asparagus between each sheet.
Step 2 of 4
Coat the salmon fillets with barbecue seasoning before placing the fillets on top of the vegetables.
Step 3 of 4
Divide the butter and sliced lemon topping off each fish, fold the foil over the fish to create packages. Add to the grill for 15-20 minutes until the fish is cooked through and flaky.
Step 4 of 4
Remove the fish and vegetables from the foil adding them onto plates before pouring the butter over the fish sprinkling on the chives.
