  • 4 piece salmon
  • 3 medium tomatoes, halved
  • 2 small red chillies, seeds removed, finely chopped
  • 1/2 cup coriander leaves, chopped
  • 2tablespoons mint leaves, chopped
  • 4 green shallots, finely sliced
  • 1/2teaspoons ground coriander
  • 1/2teaspoons ground cumin
  • 2 lemons, juiced
  • 1 pinch pepper (for seasoning)
  • 1 slice bread, crust removed
  • 1/2 cup olive oil
  • 1/3 cup tartare sauce (to serve)
  • 3-4 cloves garlic (chopped)
  • 1/4 cup lemon juice
  • 3/4 cup pine nuts
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 8

Scoop seeds from tomatoes and discard.

Step 2 of 8

Chop tomato flesh and combine in a bowl with shallots and herbs. Mix lemon juice with spices and season with salt and pepper.

Pour over salad and set aside while you prepare the sauce.

Step 4 of 8

Soak the bread in the lemon juice.

Step 5 of 8

Place pine nuts, garlic and bread into a small food processor and process until chopped. With the motor running, slowly add oil and process until it is thick and creamy, transfer to bowl.

Heat a non-stick frying pan over medium-high heat.

Step 7 of 8

Brush both sides of the salmon with a little oil. Place into pan, skin side down and cook for 4 minutes. Reduce heat to medium, turn fish and cook for a further 4 minutes.

Step 8 of 8

Transfer to serving plates and serve with tomato salad and a drizzle of tartare sauce.
