  • 600grams frozen straight cut fries
  • 4 salmon fillets
  • 1 small red chilli, deseeded
  • 2/3 cup coriander leaves, firmly packed
  • 1 cup flat-leaf parsley, firmly packed
  • 1tablespoons red wine vinegar
  • 1 lemon, rind finely grated (save 1 tbs lemon juice)
  • 1/2 cup olive oil
  • 1tablespoons oregano leaves
  • 2 garlic cloves, chopped
  • 1 oak leaf lettuce, leaves separated, torn
  • 320grams mixed tomatoes
  • 1 lebanese cucumber, roughly chopped
  • 2teaspoons olive oil

Method

Step 1 of 4

Cook chips according to packet directions.

Step 2 of 4

Process parsley, coriander leaves and oregano leaves in a food processor in short bursts until roughly chopped. Add garlic and chilli. Process until just combined. With motor running, gradually add oil. Add vinegar, lemon rind and lemon juice.

Pat dry salmon fillets. Remove bones. Heat oil in a large non-stick frying pan over medium-high heat. Add salmon, skin-side down. Cook for 4 minutes until crisp. Turn and cook for 3-4 minutes or until cooked to your liking.

Step 4 of 4

Meanwhile, combine lettuce, tomatoes and cucumber in a bowl. Season. Serve salmon with chimichurri, fries and salad.
