  • 400grams Sweet Solanato tomatoes
  • 1/4 cup balsamic vinegar
  • 1tablespoons brown sugar
  • 2 cloves garlic
  • 375grams Woolworths penne rigate
  • 60grams baby rocket leaves
  • 60grams Danish feta, crumbled
  • 2tablespoons seed mix with pine nuts

Description

Take pasta night up a notch with this balsamic tomato and feta penne recipe. It ticks all the boxes: simple, hearty, flavoursome and easy on the wallet.

Use any nuts you have leftover in your pantry, such as almonds or walnuts, instead of the seed mix.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Place tomatoes, vinegar, sugar and garlic in a small baking dish. Roast for 15 minutes or until tomatoes begin to blister.

Step 2 of 4

Meanwhile, cook pasta according to packet instructions. Drain, reserving 1/4 cup cooking liquid. Return pasta to pan.

Add tomato mixture, rocket and reserved cooking liquid to pan and toss to combine.

Step 4 of 4

Divide pasta among serving bowls. Top with feta and seeds. Season and serve.
