  • 4 Woolworths caramelised onion & Angus beef sausages
  • 1 red capscium, sliced
  • 1 red onion, cut into thin wedges
  • 4 soft hot dog rolls
  • 1/3 cup light tasty shredded cheese
  • 1/3 cup smoky barbecue sauce
  • 1/2 bunch continental parsley, leaves picked

Description

Dinner tonight is sorted! These wallet-friendly grilled capsicum and sausage subs can be whipped up in 20 minutes and will certainly satisfy the whole family.

Method

Step 1 of 4

Heat a greased barbecue grill or chargrill pan over medium-high heat. Cook sausages for 5 minutes each side or until cooked through. Transfer to a plate and cover to keep warm.

Step 2 of 4

Add capsicum and onion to grill. Cook, turning occasionally, for 4 minutes or until tender. Transfer to a bowl. Cover to keep warm.

Step 3 of 4

Cut the top of each roll lengthways, being careful not to cut the whole way through.

Step 4 of 4

Fill rolls with cheese, capsicum mixture and a sausage. Drizzle with sauce. Sprinkle with parsley. Serve.
