  • 1/3 cup pepitas
  • 420grams corn kernels
  • 600grams Woolworths chicken schnitzel
  • 350grams Woolworths kale slaw kit
  • 1/4 bunch coriander sprigs
  • 1/3 cup extra virgin olive oil

Description

Bring together six common ingredients for a far-from-common result as chicken schnitzel pieces adorn a slaw-style salad.

Shredded cooked chicken or drained flaked canned tuna are also great in this salad for a budget-friendly alternative.

Method

Step 1 of 4

Heat 1 tbs oil in a large non-stick frying pan over medium-high heat. Add pepitas and cook, stirring, for 1 minute or until toasted. Transfer to a plate.

Step 2 of 4

Add corn to pan and cook, stirring occasionally, for 3-4 minutes or until golden-brown. Transfer to a plate. Add remaining oil to pan and heat. Add chicken and cook for 4 minutes each side or until cooked through and golden-brown. Transfer to paper towel to drain.

Using a large sharp knife, cut chicken into 1cm-thick slices.

Place slaw kit, dressing and seeds (from kit) in a large bowl. Add chicken, corn and coriander to slaw and gently toss to combine. Spoon into bowls. Serve sprinkled with pepitas.
