  • 2 cloves garlic, crushed
  • 1/2 punnet thyme, leaves picked
  • 5 carrots, spiralised or cut into noodles
  • 60grams Woolworths baby leaf spinach
  • 1/2 cup ricotta
  • 1teaspoons dried chilli flakes
  • 1/4 cup pepitas

Full of colour, these carrot noodles are perfectly paired with creamy ricotta, crunchy pepita seeds and a touch of chilli heat.

Method

Step 1 of 2

Heat oil in a large frying pan over medium heat. Add garlic and half of the thyme and cook, stirring, for 1 minute or until fragrant. Add carrot and cook, stirring, for 2 minutes or until softened slightly.

Step 2 of 2

Remove from heat and allow to cool slightly. Top with spinach, ricotta, chilli flakes and pepitas. Season well. Serve.
