  • 1 Woolworths tiger crusty baguette, sliced on an angle
  • 2teaspoons extra virgin olive oil
  • 200grams Danish-style feta, roughly chopped
  • 1/3 cup Greek-style natural yoghurt
  • 1 clove garlic, peeled
  • 250grams Woolworths cooked whole beetroot, sliced into thin wedges
  • 1tablespoons honey, to serve
  • 1/2 cup picked parsley leave, roughly chopped, to serve

Description

Finger food doesn't get much easier than these crostini, with creamy whipped feta and chunks of cooked beetroot below a drizzle of honey.

Method

Step 1 of 3

Preheat oven grill. Place baguette slices on a metal tray and drizzle with oil. Grill for 2 minutes or until toasted. Set aside.

Step 2 of 3

Add feta, yoghurt, garlic and 2 tbs water to a food processor. Blitz until smooth.

Step 3 of 3

Spread toasts with whipped feta. Top with beetroot and drizzle with honey. Season well. Sprinkle with parsley to serve.
