  • 35grams chilli con carne spice mix
  • 1/2 cup medium-grain rice
  • 400grams Woolworths canned tomatoes
  • 6 6 red capsicums, tops sliced and reserved, seeds and membrane discarded
  • 1/3 cup sour cream, to serve
  • 1/4 bunch coriander, leaves picked, to serve

Description

Pump up the flavour this dinnertime with these capsicums stuffed with Mexican-inspired chilli con carne fillings and tasty Australian beef.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper.

Step 2 of 4

Heat oil in a large frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Add mince and cook for 5 minutes, breaking up with a wooden spoon, or until browned. Add spice mixture and stir to coat.

Step 3 of 4

Add rice, tomatoes and 1/2 cup water and stir to combine. Cook until sauce has thickened slightly, stirring occasionally, about 5 minutes. Remove from heat.

Step 4 of 4

Place capsicums on prepared tray. Fill with rice mixture. Replace tops of capsicum to form a lid. Bake for 40 minutes or until rice is tender. Top with sour cream and coriander. Season well. Serve.
