  • 1/4 cup plain flour
  • 2teaspoons Woolworths Cajun seasoning
  • 1 free range egg
  • 100grams salted baked pretzels, crushed
  • 500grams chicken tenderloins
  • 1 Lebanese cucumber
  • 1 cos heart lettuce, leaves separated
  • 200grams Sweet Solanato tomatoes, halved
  • 1/2 red onion, halved, thinly sliced
  • 1/4 bunch continental parsley, leaves picked
  • 1/4 cup ranch dressing

Description

Coated in a crunchy pretzel crumb, the tender chicken tenderloins steal the limelight in this budget-friendly salad. It makes the ultimate quick, filling midweek dinner.

Method

Step 1 of 4

Combine flour and seasoning on a plate. Season with pepper. Whisk egg and 2 tbs water together in a shallow dish. Place pretzels in a small food processor and blitz until finely chopped. Transfer pretzel mixture to a separate shallow dish.

Step 2 of 4

Using one piece of chicken at a time, coat chicken in flour mixture, shaking off excess. Dip in egg, then roll in pretzel mixture to coat.

Step 3 of 4

Preheat air fryer to 180°C for 2 minutes. Arrange half of the chicken, in a single layer, in the air-fryer basket. Cook for 12 minutes or until cooked through and golden. Repeat with remaining chicken.

Step 4 of 4

Toss lettuce, cucumber, tomato and onion together on a serving plate. Slice chicken and place on salad. Sprinkle with parsley. Drizzle with dressing. Serve.
