  • 180grams Woolworths haloumi, drained, cut into 6 slices

  • 60grams baby spinach leaves
  • 1 small red onion, thinly sliced
  • 100grams Sweet Solanato® tomatoes, thickly sliced
  • 1/4 bunch coriander, sprigs picked
  • 100grams Yumi’s Dip Or Create Guacamole & Jalapeño
  • 1 lime, cut into wedges

Description

The fantastic firm texture of haloumi pairs deliciously with beans and a creamy dip in these speedy Mexican-inspired tacos.

Method

Step 1 of 3

Heat a large non-stick frying pan over medium-high heat. Spray tortillas with oil. Cook tortillas, in batches, for 1 minute each side or until golden. Transfer to a plate and cover to keep warm. Return pan to heat.

Step 2 of 3

Spray haloumi with oil. Add to pan and cook for 1 minute each side or until golden-brown. Add half of the bean dip. Cook and turn haloumi for a further 1 minute or until heated. Remove from heat.

Step 3 of 3

Fill tortillas evenly with spinach, onion, tomato and haloumi. Top with coriander and guacamole dip. Serve tacos with lime and remaining bean dip.
