- 1/2 cup YoPro plain yoghurt , room temperature
- 1/2 cup plain flour
- 1teaspoons bicarbonate soda
- 1teaspoons baking powder
- 75grams 25% reduced fat butter
- 25grams coconut oil
- 2 eggs, room temperature
- 1/2 cup unsweetened almond milk
- 1 cup brown sugar
- 1 scoop vanilla protein powder
- 1/2 cup blueberries

Method
Step 1 of 6
Preheat your oven to 200°C fan forced and line a 12-hole muffin tin (you will only need)

In a bowl, whisk flour, soda, baking powder, protein and sugar together
Step 3 of 6
Whisk eggs, milk and yoghurt in another bowl together
Step 4 of 6
Melt coconut oil and butter together
Step 5 of 6
Pour half the egg mix into the dry mix and fold through, then report until nearly combined, then add in butter, oil and blueberries and fold through until just combined (don't overmix as it will give you tough muffins!)
Step 6 of 6
bake for 5 mins at 200°C, then turn the oven down to 160°C and bake for a further 20 minutes, or until golden and cooked through
