- 1 3/4 cup self-raising flour
- 1/2 cup milk
- 2tablespoons icing sugar (to serve)
- 125grams butter, melted
- 1 batch of roasted strawberries
- 1/2 cup almond meal
- 2 eggs
- 1/2 cup caster sugar
- 2tablespoons flaked almonds

Preheat oven to 180°C.
Step 2 of 9
Line a 6-hole large muffin pan with large paper cases.

Place flour, sugar and almond meal into a large bowl.
Step 4 of 9
Whisk cooled melted butter, milk and eggs together in a jug. Add to flour mixture and using a large metal spoon, gently stir until just combined.
Step 5 of 9
Drain liquid from balsamic strawberries, reserving 2 tablespoons. Roughly mash strawberries and gently stir into batter with reserved liquid. Spoon into paper cases.
Step 6 of 9
Top with flaked almonds, pressing gently into batter.

Bake for 25-30 minutes or until cooked through when tested in the centre with a skewer.

Stand for 5 minutes before turning out onto a wire rack to cool.

Dust with icing sugar. Serve.
