- 1 cup dried apricot, finely chopped
- 1/4 cup coconut, shredded
- 1/2 cup hulled tahini
- 1/4 cup sesame seeds
- 1/4 cup sunflower seeds
- 1/3 cup light olive oil
- 3 cup rolled organic oats
- 1/4 cup pepitas
- 1/2 cup organic honey

Method
Step 1 of 5
Preheat oven to 160°C. Line a 18x28cm pan with baking paper.
Step 2 of 5
Place rolled oats, sesame seeds, sunflower seeds, pepitas, shredded coconut and dried apricot in a large bowl.
Step 3 of 5
Place honey, hulled tahini and light olive oil in a small saucepan and stir over medium heat until melted.
Step 4 of 5
Pour honey mixture over oats and stir thoroughly. Pour mixture into prepared pan, smooth top and press down firmly. Bake for 30 minutes.
Step 5 of 5
Leave to cool. Chill for 30 minutes, before cutting into bars. Store in an airtight container in the fridge.
