- 125grams butter, melted
- 3 bananas, 1 sliced, 2 mashed
- 150grams fresh dates, pitted, chopped
- 1/4 cup chia seeds
- 2 eggs, lightly beaten
- 1/2 cup caster sugar

Method
Step 1 of 3
Preheat oven to 180°C. Line a 12-hole medium muffin pan with paper cases. Combine flour, sugar and chia seeds in a bowl. Stir in the dates.
Step 2 of 3
In another bowl, mash the bananas. Stir in eggs, butter and milk. Fold into the flour mixture until just combined.
Step 3 of 3
Divide mixture among muffin holes and top each with banana slices. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Serve warm or at room temperature.
