  • 3/4 cup desiccated coconut
  • 2 cup self-raising flour
  • 2tablespoons milk
  • 60grams butter, melted
  • 1/2 cup macadamias, chopped
  • 20grams roasted coconut chips
  • 2 eggs
  • 1/2 cup caster sugar
  • 1/3 cup macadamia oil

Method

Step 1 of 3

Preheat oven to 180°C. Line 12 holes of a muffin pan with paper cases. Combine flour, coconut, sugar and macadamia in a bowl.

Step 2 of 3

Lightly whisk eggs, oil, butter and milk in a bowl. Fold into flour mixture.

Step 3 of 3

Divide among muffin holes. Top with coconut. Bake for 20 minutes or until a skewer inserted into centre comes out clean. Serve warm or at room temperature.
