  • 1/4 cup milk
  • 80grams butter, softened
  • 300grams sour cream
  • 2 red apples, peeled, cored and diced
  • 2 red apples, peeled, cored and thinly sliced (for decoration)
  • 400grams cinnamon tea cake mix
  • 3 prunes, stones removed
  • 1 dash cinnamon
  • 1/3 cup oats
  • 2 eggs

Method

Step 1 of 5

Bring apples and 1 1/2 cups of water to the boil. After 5 minutes, add the prunes, oats and cinnamon and continue to boil for another 5 minutes or until the oats are completely cooked though. Blend mixture until the purée is smooth. This should make 4 baby serves of oat, apple and prune purée.

Preheat the oven to 180°C. Grease and line a 20x30cm pan with baking paper.

Place cake mix (reserve cinnamon sachet), 1/2 quantity oat, apple and prune purée, eggs, milk and butter into a bowl. Beat with an electric hand beater on low until combined. Increase speed to medium and beat for 2 minutes. Pour into tin.

Step 4 of 5

Bake for 30–35 minutes until cooked when tested with a skewer. Lay apple slices over. Top with sour cream. Sprinkle over reserved cinnamon.

Step 5 of 5

Return to oven and cook for a further 20 minutes. Cool in pan. Slice to serve.
