- 1 1/4 cup self raising flour
- 3/4 cup milk
- 1tablespoons icing sugar
- 125grams butter, at room temperature
- 100grams dark chocolate, roughly chopped
- 1/2teaspoons baking soda
- 415grams can stoneless black cherries in syrup
- 1/4 cup cocoa (plus 1 tbs cocoa extra)
- 2 eggs
- 3/4 cup brown sugar

Method
Step 1 of 3
Preheat oven to 180°C. Line a 12 hole medium muffin pan with paper cases.
Step 2 of 3
Using an electric beater, beat butter and sugar until light and creamy. Add eggs, one at a time, beating well after each addition. Sift flour, cocoa and baking soda over mixture. Add milk, and using a large metal spoon, gently stir until well combined. Add chocolate and cherries and fold through cake mixture.
Step 3 of 3
Divide mixture between cases until three-quarters full. Bake for 20-25 minutes or until cooked through when tested with a skewer. Cool on a wire rack. Combine cocoa and icing sugar in a small bowl. Serve muffins dusted with cocoa mixture.
