Blueberry & Orange Cake

- 2tablespoons orange rind, grated
- 2tablespoons coloured sprinkles (to decorate)
- 70grams dried blueberries
- 535grams vanilla cake mix
- 1/3 cup orange juice
Method
Step 1 of 3
Combine orange juice and blueberries in a small saucepan and bring to the boil over medium-high heat. Reduce heat to low and simmer for 5 minutes. Remove from heat and stand while you prepare the cake.
Step 2 of 3
Prepare cake mix as per packet instructions, adding 1 tbs orange rind. Spoon into the supplied paper tray and smooth top. Drain blueberries and scatter over top of cake, then bake as per packet directions. Cool.
Step 3 of 3
Prepare icing according to packet directions, stirring in the remaining orange rind. Spread over cooled cake and decorate with sprinkles.
