  • thickened cream (or ice-cream, to serve)
  • 1 cup milk
  • 1tablespoons butter, softened
  • 1/4 cup demerara sugar
  • 1teaspoons vanilla extract
  • 1teaspoons ground cinnamon
  • 1 cup cream
  • 1/2 orange, zested
  • 1/3 cup dark chocolate chips
  • 3 free range eggs
  • 1/2 cup caster sugar
  • 250grams leftover banana loaf, cut into 1.5 cm cubes

Method

Step 1 of 5

Preheat oven to 160ºC and grease a medium 6-hole muffin tray with butter.

Divide cubed cake between muffin holes.

Place eggs, milk, cream, vanilla, orange zest, cinnamon and caster sugar in a medium bowl and whisk to combine into a custard.

Step 4 of 5

Sprinkle half the chocolate chips over the cake pieces. Pour custard mixture over the cake pieces until muffin holes are three-quarters full, then sprinkle over remaining chocolate chips. Set aside for 15 minutes for cake to absorb custard, then top with remaining custard mixture until muffin holes are three-quarters full. Sprinkle over demerara sugar.

Bake for 20 minutes or until edges of puddings are just browned and custard has only a slight wobble. Rest for 5 minutes in tray, then carefully remove. Serve with cream or ice-cream.
