Quick Apricot & Almond Slice

- 2 cup self raising flour
- thickened cream (to serve, optional)
- 2/3 cup milk
- 2tablespoons icing sugar (to serve)
- 250grams soft butter, chopped
- 1 orange, rind finely grated
- 2 eggs
- 1 cup caster sugar
- 1/2 cup almond meal
- 820grams can apricot halves in fruit juice
Method
Step 1 of 10
Preheat oven to 180°C. Grease and line a 16x26cm slab pan.
Step 2 of 10
Drain apricots. Place onto paper towel, cut side down. Cover with paper towel. Pat dry.
Step 3 of 10
Process eggs and sugar in a food processor until pale yellow. Add butter and process a further 2 minutes until creamy. Sprinkle flour, almond meal and orange rind over butter mixture. Pour milk over dry ingredients. Pulse until a batter forms.

Spoon two-thirds of batter into prepared baking pan.
Step 5 of 10
Smooth top with the back of a wet spoon.
Step 6 of 10
Place apricots, cut side up, over batter. Spoon remaining batter over apricots and spread roughly. It dose not matter if some of the apricots show through batter.

Bake for 45 minutes or until cooked through when tested with a skewer in the centre of the slice.

Allow to stand in pan for 10 minutes.
Step 9 of 10
Remove from pan and cool on a wire rack.
Step 10 of 10
Sprinkle with icing sugar. Cut into squares and serve with cream.
