  • 1/2 cup vegetable oil
  • 65grams plain flour
  • 3tablespoons self-raising flour
  • 1/4teaspoons ground cinnamon
  • 25grams coconut, shredded
  • 175grams walnuts, toasted and chopped
  • 125grams white chocolate chips

Method

Step 1 of 4

Brush 2 baking sheets lightly with oil and line with nonstick baking paper.

Step 2 of 4

Beat the egg and sugars together in a bowl until pale and creamy. Stir in the vanilla extract and oil. Sift in the flours and cinnamon, then add the coconut, walnuts and chocolate chips and mix well with a wooden spoon.

Step 3 of 4

Shape rounded tablespoonfuls of the mixture into balls and place on the prepared baking sheets, pressing the mixture together with your fingertips if it is crumbly. Bake in a preheated oven, 180°C for 12-15 minutes or until golden.

Leave to cool for a few minutes on the sheets, then transfer to a wire rack to cool completely.
